And birch sap is mainly used for its purifying and draining properties: if you use it all year round, you constantly call on your kidneys to drain, which risks tiring them unnecessarily and demineralising your body.

Can you do several cures in a year?

Yes, two to three cures per year are a good habit. The ideal periods are spring, autumn and after the end-of-year holidays.

What is the difference between fresh sap and pasteurised sap?

Fresh sap has not undergone any pasteurisation and retains all of its nutrients and active ingredients. Pasteurised sap has a longer shelf life but may lose some of its properties.

Does birch sap contain alcohol or sugars?

Birch sap naturally contains small amounts of plant sugars. It does not contain alcohol. If it ferments, a slight amount may appear, hence the importance of proper cold storage.
